  2. Crack 2 eggs into a bowl, add 1g of salt, and beat thoroughly with chopsticks or a whisk until the egg liquid is uniform, with no large pieces of egg white.

  3. Add the roasted gizzard lining powder to the egg liquid and stir well, allowing the powder to fully incorporate.

  4. Prepare 150-180ml of lukewarm water (about 40°C, comfortable to the touch) and slowly pour into the egg liquid while stirring. Note: The egg-to-water ratio is about 1:1.5. The water temperature should not be too high, or the egg will curdle; too little water makes the custard firm, too much makes it difficult to set. Strain the mixture through a fine sieve twice to remove foam and any undissolved egg white, making the custard smoother. Pour the strained egg liquid into a steaming bowl and skim off any surface foam. Cover with heat-resistant plastic wrap (prick a few holes with a toothpick) or a plate to prevent steam from dripping and creating a蜂窝 (honeycomb) texture.

  5. Add water to a steamer. Once the water is boiling, place the bowl in, reduce to medium-low heat, and steam for 10-12 minutes. Note: Do not use high heat—it causes the egg to boil and form bubbles. Do not open the lid frequently. After steaming, turn off the heat and let it sit covered for 2 minutes before removing, making the custard even more tender.

  6. Drizzle with 2-3 drops of sesame oil and a little light soy sauce (optional), and sprinkle with chopped green onion. Serve warm. Once daily for 3-5 consecutive days as one course. Avoid consuming on an empty stomach—best consumed with meals or after meals.

Known for strengthening the stomach, promoting digestion, astringing essence, stopping enuresis, and treating urinary calculi. Modern research shows it contains gastric hormones, keratin, amylase, various vitamins, and trace elements, with effects of enhancing gastric motility, increasing pepsin and pancreatic lipase activity, and strengthening bladder sphincter contraction. After consumption, it increases gastric juice secretion and enhances gastric motility, thereby slowly strengthening digestive capacity and accelerating gastric emptying.
