  1. Take 30g of sweet almonds (South almonds), rinse them, and soak in plenty of water for at least 2 hours until the skins become soft. Note: Always use sweet almonds, never bitter almonds. Drain the soaked almonds and gently rub them to remove the skins.

  2. Place the peeled almonds in a blender with about 200ml of water.

  3. Pour the blended almond mixture into a pot, add 200-250ml of fresh milk and rock sugar to taste. Heat over medium-low heat, stirring constantly to prevent burning. Turn off the heat once it comes to a boil.

  4. Strain the cooked almond milk through a fine sieve or cheesecloth to remove any residue for a smoother texture. Allow it to cool slightly before adding honey to taste, if desired.
