Braised Loofah with Edamame
Braised Loofah with Edamame is a classic and incredibly popular summer homestyle dish, especially beloved in the Jiangnan region of China. The vibrant green of the loofah and edamame is visually appealing and appetizing. The sweet, soft texture of the loofah perfectly complements the savory, crisp-tender edamame, and the resulting broth is delicious and perfect for mixing with rice. Often described as the “taste of summer memories,” this dish is simple, quick, and ready in about 15-20 minutes.

Main Ingredients
- Loofah (Chinese okra ) 2-3 pieces
- Fresh soybeans (edamame) 200g
- Garlic 2-3 cloves
- Red chili pepper 1-3 pieces
- Spring onion 1 stalk
- Cooking oil as needed
- Salt to taste
- White sugar a pinch
- Light soy sauce 1 tsp
- Oyster sauce a little
- Ground white pepper a pinch
- Water about half a small bowl
Steps
Edamame: Shell the fresh edamame, rinse the beans, and drain. Loofah: Wash the loofah and gently scrape off the outer skin with a thin spoon or peeler. Then cut into rolling chunks. Note: If not cooking immediately, soak the cut loofah in lightly salted water to prevent oxidation and blackening.

Heat a wok or skillet over medium heat and add cooking oil. Once hot, add the garlic slices (and chili peppers, if using) and sauté until fragrant. Add the edamame and stir-fry quickly over medium-high heat for 2-3 minutes until the beans turn bright green and the skins start to wrinkle slightly.

Add the loofah chunks, a pinch of salt, and a pinch of sugar. Stir-fry quickly for about 2 minutes.

When the loofah starts to soften, add about half a small bowl of water. Cover and simmer over medium heat for 3-5 minutes until the loofah is fully tender and translucent, and the edamame is cooked through.

Uncover, season with light soy sauce, oyster sauce, and white pepper to taste. Increase the heat to high, stir-fry quickly to combine and reduce the sauce, then garnish with chopped spring onion and serve.
